Why Lentils?

Lentils are the most nutritious of all legumes, due to their high protein and phosphorus content. They are extremely low in fat and are rich in iron, zinc, potassium, and calcium.  Lentils are also very high in fiber; this makes them a good protector against many health problems such as heart disease or irritable bowel syndrome.

When sprouted, the soluble fiber contained in lentils increases up to 300%, and vitamin content can increase by 20 to 30 times its original value.
