Why tomatoes?

Tomatoes are known to be extremely high in lycopene, a carotenoid found in tomatoes that has been extensively studied for its antioxidant and cancer-preventing properties. Lycopene has been found to prevent against prostate, breast, pancreatic, and intestinal cancers. In addition to their high amount of lycopene, tomatoes are loaded with other vitamins and nutrients. They are an excellent source of vitamin C, vitamin A, and beta-carotene. In addition, tomatoes are a great source of fiber, which has been proven to lower LDL cholesterol and prevent colon cancer.

Tomatoes are wonderful for heart health. They are a good source of potassium, niacin, vitamin B6, and folate; all excellent minerals to develop a healthy cardiovascular system. Tomatoes are a very good source of vitamin K, which is extremely good for bone health. About 18% of your daily value of vitamin K can be found in one cup of raw tomato.
